NEW MEMBERS

Please remember to welcome Luis Sanchez and Clinton Brown into our congregation. Clinton and Luis joined the church following Confirmation classes with the pastor. Welcome Luis and Clinton!

Please consider the following items the next time you are shopping and would like to contribute to the Food Pantry:

  • Small cans of fruits and vegetables with pop-top lids
  • Granola or cereal bars
  • Individual boxes of cereal
  • Small cans of milk
  • Juice boxes
  • Small cans of entrees like ravioli, stew, tuna, soups, hash, all with pop-top lids
  • Crackers
  • Peanut butter
  • Cat food or dog food with pop-top lids
  • Bottled water or other beverages
  • Trail mix

Just look at the foods before you buy them and think about how you would eat them if you had nothing. Could you get the can open? Do you have to cook it before you can eat it? Do you need other ingredients to prepare it? Can you carry it around in extreme heat? If you don’t think you could eat that particular food, because of the way it is packaged or because it can’t be eaten cold, or because it needs other ingredients for preparation, then it probably won’t work for our folks. We thank you for all of your kindness and for all of the wonderful things you have done for our needy. And we hope that you will continue to support our Food Pantry!

Special Funds Offer Another Opportunity to Help!

Our church is looking good, but we need to keep it that way! So many improvements have been made that make our church a safer and more appealing home. We could still use your help in paying for all the improvements and in keeping ahead of problems. We also have a sign fund that will help to pay for signs on the property. If you can support either one of these funds, just write "Sign Fund" or "Improvement Fund" on your check and place it in the offering or mail it to Henderson Presbyterian Church, P.O. Box 91346 Henderson, NV 89009. Thanks!

Picnic and Barbecue Food Safety Tips

By Chris Carlton, R.D.

It’s time to celebrate the 4th of July, and your whole family is ready for an outing. Picnics and barbecues are great activities to enjoy the summer months, but don’t spoil a happy holiday by making people sick! It is not always possible to see, taste, or smell dangerous bacteria that may cause illness if food is mishandled. Bacteria grow and multiply rapidly in the danger zone between 40º F and 140º F. When transporting food and cooking out, it is especially important to pay attention to matters of food safety and keep cold foods cold and hot foods hot. Foods transported without an ice source or left out in the sun will not stay safe for long. If you do eat mishandled foods, you may suffer from flu-like symptoms or even worse caused by food poisoning. Before having a picnic or barbecue, be sure to prepare and store food safely, then pack it properly for traveling. It is important to plan the right amount of food to take. That way, you will not have to worry about the storage or safety of leftovers. Here are 11 picnic and barbecue food safety tips that you should ALWAYS consider.

  1. When in doubt, throw it out! If there are leftovers, throw them out unless you can safely keep them chilled until you get home. If there is still ice in the cooler when you get home, the leftovers should be okay to eat. Any leftovers left outside for more than ONE hour in our heat should be thrown out.
  2. ALWAYS wash hands and work areas; be sure all utensils are clean before preparing food. If going to a park, take along some antiseptic wipes for clean hands.
  3. Use a food thermometer to be sure bacteria are destroyed, and to avoid over-cooking foods. Cook hamburgers and ribs to 160º F or
  4. until the center is no longer pink and the juices are clear. Cook ground poultry to 165º F and poultry parts to 180º F.
  5. Foods that are cooked ahead of time need to be completed in plenty of time to chill thoroughly in the refrigerator before being packed. Use an insulated cooler with sufficient ice or ice packs to keep the food at 40º F or colder.
  6. Eat take-out foods within two hours of picking up.
  7. Do not carry coolers in the trunk; carry them inside the air-conditioned car.
  8. As much as possible, keep coolers in the shade.
  9. When preparing any recipes with mayonnaise, refrigerate as soon as possible.
  10. When taking foods off the grill, put them on a clean plate, not the same platter that held raw meat.
  11. Reheat cooked meats until steaming hot.

Have a safe and fun picnic!

Try this recipe for a yummy addition to your picnic!

Homemade Salsa—serves 6

1 cup fresh tomatoes, diced
½ cup corn kernels, fresh or frozen (thawed)
½ cup diced onion
1 Tablespoon (or less) chopped jalapeno peppers
2 Tablespoons lime juice
2 cloves fresh garlic, finely diced

Combine all of the ingredients in a bowl. Chill. Serve with low-fat, baked tortilla chips or cut, fresh vegetables.
